Principiano, Langhe Bianco 2021

Principiano is a storied winery based in the town of Monforte d'Alba, Piedmont. Today, it is headed up by Ferdinando Principiano, who has garnered a real reputation for his commitment to traditional winemaking methods and the production of artisanal wines; allowing the natural characteristics of the grapes and the terroir to shine through. Ferdinando gained fully organic status for the Principiano winery in 2003. Langhe Bianco 2021 is made from 100% organically farmed Timorasso, from vines at least 40 years old. Floral and citrus notes are on the nose, which moves to more minty and flinty flavours on the palate. Medium-full bodied (there's a touch of skin-contact at fermentation which increases the texture in the wine) with a good level of acidity to balance, it's a great wine to pair with truffle pastas.
