Parés Baltà, Electio 2021

A family owned winery dating back to 1790, Parés Baltà now owns five estates across the Penedès mountains. The variety of the soils and elevation create unique microclimates that give a special personality to their wines. Organic viticulture is at the heart of the operation, with the team at Parés Baltà even using its own flock of sheep to fertilise the vineyard and bees for pollination during the flowering season - how good. Electio 2021 is made from 100% Xarel-lo, the vines of which are all over 100 years old which adds heaps of concentration into the wine. The grapes were hand-harvested and then aged for 4 months in French oak to further add richness & complexity. A nose of ripe peach, pear, oak, honey and salt moves to a dry, medium-bodied and indulgently creamy palate with further softly mature fruity notes and a real elegantly mineral finish. An absolute joy; drinking well now but will continue to develop over the next 5-10 years. Best paired with grilled seafood.
