Il Vigneri di Salvo Foti, Aurora 2019

Salvo Foti is at the heart of the biodynamic wine movement in Sicily, meaning everything he does in the vineyard and winery is in harmony with nature as a whole. Aurora 2019 is named for the small butterflies which live among his grapevines on the volcanic slopes of Mt Etna, and with the delicately aromatic, floral aromas imparted from the Carricante grapes it is easy to see why. However, this light nose leads onto a whack of juicy, salty, minerally lemon flavours on the palate, which finishes with a great tropical freshness and the flinty minerality you expect from vines grown on volcanic soils.
