Parellada is a grape native to the Catalan region of Spain, and is one of the key players in producing the country’s famous sparkling wine, Cava. Parellada naturally brings heady aromas of blossom and green apples to its wine, and has been likened to a Spanish, yet slightly more floral, Sauvignon Blanc.
