
Holly's Garden, Pinot Gris 2019

Neil Prentice is by day a Wagyu beef farmer and in his spare moments, one of the new wave of Australian exploratory winemaker, looking for unique sites to make balanced wines which express their provenance. The grapes used for Holly's Garden are grown using biodynamic practices at 750m altitude in the deep volcanic soils of the Whitlands high plateau in northern (and often snowy!) Victoria. Pinot Gris 2019 is a superb cool-climate example of Pinot Gris, not too dissimilar from those you'd find in Alsace. Generously textured with notes of golden apples, pears, and ginger; it's a super food-friendly wine which perfectly knows its place; in a glass, two or three inches in front of your knife, or chopsticks.
