Galmés i Ribot, Son Llebre 2022

Cati Ribot is a native Mallorcan and grew up surrounded by farming, with her father growing olives, almonds and, most importantly, grapes. She started her Galmés i Ribot project in 2019 to focus on the indigenous grapes which Mallorca grows best, as well as low-intervention, natural winemaking. Son Llebre 2022 is made from a blend of 80% Giró Ros and 20% Malvasia, grown in the north of Mallorca on volcanic soils. The grapes are hand-harvested and left on the skins for a couple of days to increase texture and complexity in the wine, before ageing for 4 months in clay amphorae. Brightly aromatic, it has notes of bruised apple, pineapple, lemon peel and peaches. The palate is vibrant and rich, with further citrus notes and a nice lick of salinity on the finish.
