Familia Deicas, Castelar Extra Brut NV

Familia Deicas winery was born in 2000 as a project for making quality terroir-driven wines with a minimal intervention philosophy. Under the eye of third-generation vigneron, Santiago Deicas, as winemaker; the portfolio is increasingly lo-fi in its approach preferring the use of clay amphorae and neutral oak barrels, with a preference for sustainable farming practices. Castelar Extra Brut NV is made from a blend of 90% Chardonnay and 10% Viognier made in the traditional method, i.e. like a Champagne. Elegantly dry yet creamy with notes of peach, pear and vanilla; it's a super versatile sparkling wine and one best served as an aperitif or paired with a cheeseboard.
