Domaine Pierre Bories, Hippolyte Blanc 2022

Domaine Pierre Bories can date their winemaking heritage back to the 18th Century. Calling Corbières, in the Languedoc, home - today they farm 100% organically and focus on strengthening the biodiversity of their vineyards wherever possible. They firmly believe that their passion for organics and passion for winemaking shine through in the glass, and we're certainly inclined to agree. Hippolyte Blanc 2022 is named for Pierre's son and is made from an organic blend of 40% Roussanne, 35% Grenache Blanc and 25% Marsanne. A nose of apple, blossom, juicy pear and apricot lead to a medium-bodied palate which is equal parts creamy and mineral. Super food-friendly, but best with poultry.
