Located in Les Loges, Pouilly-sur-Loire, Domaine Jonathan Didier Pabiot is a fifth-generation family estate renowned for its commitment to organic and biodynamic viticulture. Jonathan took over in 2005, persuading his father to convert their 20 hectares of vineyards to organic farming. The estate became the first Demeter-certified biodynamic domaine in Pouilly-Fumé. Their vineyards span three primary soil types—Kimmeridgian marl, Portlandian limestone, and flint—contributing to the distinct minerality in their wines. A biodynamic Sauvignon Blanc from old vines rooted in limestone, marl, and flint soils. The nose reveals ripe citrus, white peach, and subtle smoky flint. On the palate, it's vibrant and full-bodied, with layers of lemon zest, green apple, and a mineral-driven finish. Aged 12 months on lees in stainless steel and concrete, it offers a harmonious balance of fruit and minerality.
