Bodegas Yuste, Aurora Pedro Ximénez NV (50cl)

In 1991, Francisco “Paco” Yuste took ownership of the historic Bodega Santa Ana and its centenarian solera. The Aurora brand dates back to 1904 when the original Bodega Santa Ana winemaker, Pedro Romero, named his finest Manzanilla after his wife, whose likeness can still be found on the bottle. Today, Bodegas Yuste is a family-owned collection of several small wineries located in the historic city of Sanlúcar de Barrameda. Aurora Pedro Ximénez NV is a sweet, fortified sherry made using 100% Pedro Ximénez. Dark mahogany in colour, it's highly aromatic with notes of raisins, dates, prune and fig. Sweet, silky and full-bodied; the palate nevertheless has a pleasant balance between sweetness and vinosity. The perfect wine to pair with blue cheeses or caramel-based puddings.
